Cashew Everything Bars (Easy No-Bake Snack Bars)

A quick, no-bake bar made with cashews, almonds, coconut, honey, and almond butter. These easy homemade snack bars are perfect for breakfast, an afternoon snack, or something sweet from the fridge.

Ingredients

  • 3 Handfuls of Cashews
  • 1.5 Handfuls of Sliced Almonds
  • 1 Handful of Raisins
  • 1 Handful of Finely Shredded Coconut
  • 2 Tablespoons of Tiger Nut Flour
  • Sprinkle of Pumpkin Seeds and Cranberries
  • 2 Tablespoons of Coconut Butter
  • 2 Heaping, Heaping Tablespoons of Almond Butter
  • 2 Teaspoons of Honey

Instructions

Add all of the ingredients in to a food processor, cover it with the lid, and blend. Blend well, but so that it's still gritty, not until it's smooth. Once combined and well blended add additional almond butter if the mixture seems a bit dry.

Pour in to a pan and press it in. The recipe can also be used to make energy balls/snack bites.

Next, top with almond butter, honey, pumpkin seeds, cashews, and cranberries. 

Let the batch of breakfast/snack/dessert goodness chill in the fridge.

After they are chilled cut them in to bars.

Notes

These bars store well in the refrigerator for up to a week. You can also freeze them after cutting them into bars for quick snacks.
