These Cashew Everything Bars are a simple, no-bake snack made with cashews, almonds, coconut, honey, and almond butter. They come together quickly in a food processor and make an easy breakfast bar, snack, or something a little sweet to keep in the fridge for later.

I love easy breakfasts. And easy snacks. And easy desserts, too. These bars can be all three.
They came together because I wanted something quick and nourishing that I could grab from the fridge without much thought. Something with nuts, seeds, and a little sweetness, but not overly sweet or complicated.
The recipe was created on a whim, and the measurements are just estimates. That's part of the beauty of making these; you don't have to be exact or have the exact same ingredients. You can make a version of these from ingredients that you already have, most likely.
The base of the bars is a mixture of cashews, almonds, coconut, raisins, and seeds, blended together with almond butter and some Two Hives honey (local to Austin, but ships) to hold everything together. The almond butter is key; it's the main binder. You could use peanut butter, pecan butter, etc, but you'll need a butter to help hold all of the goodness together.
The sweetness of the bars comes mostly from the ingredients, with a bit of honey added. When possible, I love using local honey. These were made using Two Hives honey, which is local to Austin.
I love how creative you can get with these bars. You can add different nuts, swap dried fruit, or include seeds you already have in your pantry. They’re less about exact measurements and more about making something simple, that's so good.
Making the Bars
To make the bars, you'll add all of the ingredients into a food processor, cover it with the lid, and blend until the mixture comes together. You'll blend it well, but not until it's smooth. You still want it to be gritty for texture.
Once combined and well blended, add more almond butter if the mixture seems a bit dry. The mixture should hold together when pressed between your fingers.
You'll then pour the mix into a pan and press it in. The recipe can also be used to make energy or snack bites.
Next, top with almond butter, honey, pumpkin seeds, cashews, and cranberries.
Place the pan in the refrigerator or freezer and let the bars chill until firm.
A Few Notes
Once chilled, slice into bars and store them in the refrigerator. They are delicious! And surprisingly refreshing when eaten chilled.
You can make a double or triple batch, and freeze a portion, so that you have completely made bars ready to go and just a thaw away.

Ingredients
- 3 Handfuls of Cashews
- 1.5 Handfuls of Sliced Almonds
- 1 Handful of Raisins
- 1 Handful of Finely Shredded Coconut
- 2 Tablespoons of Tiger Nut Flour
- Sprinkle of Pumpkin Seeds and Cranberries
- 2 Tablespoons of Coconut Butter
- 2 Heaping, Heaping Tablespoons of Almond Butter
- 2 Teaspoons of Honey
Instructions
Add all of the ingredients in to a food processor, cover it with the lid, and blend. Blend well, but so that it's still gritty, not until it's smooth. Once combined and well blended add additional almond butter if the mixture seems a bit dry.
Pour in to a pan and press it in. The recipe can also be used to make energy balls/snack bites.
Next, top with almond butter, honey, pumpkin seeds, cashews, and cranberries.
Let the batch of breakfast/snack/dessert goodness chill in the fridge.
After they are chilled cut them in to bars.
Notes
These bars store well in the refrigerator for up to a week. You can also freeze them after cutting them into bars for quick snacks.
