I love easy breakfasts...and snacks...and desserts...and this is all of them. These bars were created out of a want for something quick and healthful.
The recipe was created on a whim and the measurements are just estimates. That's part of the beauty of making these, you don't have to be exact or have the exact same ingredients. You can make a version of these from ingredients that you already have most likely.
One of the keys to the recipe is the almond butter - you could use peanut butter, pecan butter, etc - but it's the main binder helping to hold all of the goodness together.
The sweetness of the bars can be adjusted to your taste. Most of the ingredients add sweetness in their own way. The main added sweetener is honey. I encourage you to use local honey if possible. These bars were made using Two Hives Honey, which local here to Austin.
You will add all of the ingredients in to a food processor, cover it with the lid, and blend. Blend well, but so that it's still gritty, not until it's smooth. Once combined and well blended add additional almond butter if the mixture seems a bit dry. Pour in to a pan and press it in. The recipe can also be used to make energy balls/snack bites.
Next, top with almond butter, honey, pumpkin seeds, cashews, and cranberries.
Let the batch of breakfast/snack/dessert goodness chill in the fridge.
After they are chilled cut them in to bars. They are delicious! And surprisingly refreshing when eaten chilled.
You can make a double or triple batch and after chilling and cutting in to bars, freeze however many bars you like so that you have completely made bars ready to go and just a thaw away.

- 3 Handfuls of Cashews
- 1.5 Handfuls of Sliced Almonds
- 1 Handful of Raisins
- 1 Handful of Finely Shredded Coconut
- 2 Tablespoons of Tiger Nut Flour
- Sprinkle of Pumpkin Seeds and Cranberries
- 2 Tablespoons of Coconut Butter
- 2 Heaping, Heaping Tablespoons of Almond Butter
- 2 Teaspoons of Honey
Instructions
