This one is a simple but fun, healthful comfort food that I recently made. We used it as a side but it could also be added to a salad, veggie bowl, tacos, even breakfast!
The nice thing about this dish, too, is that limited items and ingredients are needed. You'll just need a cutting board, vegetable peeler, knife, the ingredients below, and then whatever baking dish you would like to use. I used the baking dish, instead of using a bowl plus the baking dish, to add the carrots to as I was peeling them and then added all of the other ingredients to the carrots in the baking dish as well.
If you're able! You can add the outer most carrot peeling, the one that's part of the prep, along with the cut ends of the carrots to your compost items.
I hope that you enjoy these! And that they bring you a bit of happy. I thought it was a fun way to eat carrots as an option to the more traditional slices.

Ingredients
- 1 bag of raw carrots (i used organic)
- ½-1 tbs thyme
- ¼ tsp salt
- 1-2 tbs maple syrup
- 1 tbs avocado oil or olive oil
*All of the measurements are estimates.
Instructions
Wash and peel the carrots, then you'll cut ends off. In the dish that you are going to bake the carrots in, using the vegetable peeler, peel the carrots in to the dish so that in the end it's full of all of the carrot strips.
Once as much of the carrots are peeled as possible, toss with the olive oil or avocado oil. Sprinkle the carrots with the thyme and salt and then toss again to evenly distribute the ingredients. You'll save the maple syrup to add to the carrots after they bake.
Bake the carrots at 400F for about 10 minutes. The carrots should be tender but not super soft. Once the carrots are done baking drizzle the maple syrup on top and using a fork or another utensil gently stir so that the maple syrup is evenly coating the carrots.
