Cereal. Traditional Flour-Full Cereal. I could eat it for every meal. Before my body decided that gluten doesn't love me as much as I love it there were times when I would eat it twice a day or a bowl big enough to count as that. Have you been there? I mean, who doesn't love a big carb-y bowl of cereal. There's something so satisfying about scooping up bites to eat...and comforting.
What makes a GOOD cereal? To me, it's the sweetness and crunch. Plus! Convenience. This banana and coconut cereal is all of this. Also, it's refined sugar free and not processed, which means it's a healthy, crash-free start to your day. Remember me saying I'm an anytime cereal lover? This is also a perfect option for that mid-afternoon sugar craving or "I don't want to make dinner" moment.
I'm all about batch prep. And canning jars, like the beloved mason jars. To amp up the convenience factor of this recipe you can make a batch of the dry ingredients and then let it sit pretty on a pantry shelf. When the breakfast or sweets craving comes - pour a bowl. Then, add a sliced banana, and a generous pour of coconut milk (or milk of choice). If you want to meal prep, the dry ingredients can be portioned in to single serving mason jars or weck jars. You can store these in the pantry or refrigerator. The night before you plan to cereal, add a sliced banana to the preportioned dry mix. Then, pour coconut milk over the cereal mix and let it live a life of luxury in the fridge until the next day. Grab. And Go. When you are ready.

Ingredients
- 1 Banana, Sliced
- 4 Tbsp Roasted & Salted Sunflower Seeds
- 2 Tbsp Unsweetened Raisins
- 2 Tbsp Unsweetened Coconut Flakes
- 8 oz Unsweetened Coconut Milk
Instructions
In a small bowl, add sunflower seeds, raisins, coconut flakes, and sliced banana. Pour coconut milk on top and reminisce on one thing that you are feeling grateful for. And enjoy.
I like to let the cereal sit in the coconut milk for just a bit and scoop in.
