Fall is here and so are all the pretty colors of fall. This mix of sweet potatoes, beets, green apple, and bell pepper are sure to give you the fall feels and brighten up your meal and hopefully your day.
This dish is sweet + savory and can be breakfast, lunch, dinner, or anything in between. It's ready in about 30 minutes and that's counting the bake time. So easy, super nutritious, and with the green apple a little different from your norm...or at least mine.
I think it was an Amy Meyers recipe that I first saw green apple used for a warm and savory breakfast dish, it was for a hash if I remember right. Earlier this week I was looking around online for meal inspiration and came across another recipe by Thriving on Paleo that also has green apple.
My version is simple, just the veggies, sea salt, and olive oil baked at 425 for about 20 minutes.
You can add other spices to vegetables and apple - cinnamon, cayenne, thyme, rosemary, whatever sounds good to you.
The dish can be used in a breakfast hash and topped with salsa or a spicy sauce or eaten plain. It's a colorful add to tacos or a happy base for a bowl to top with salmon or whatever meat you feel like or have at home or you can skip the meat and do a plant-based bowl. There are so many options for this.
Whatever you decide to create with this dish, I hope it's just the pick me up or pop of color that you need.

Baked sweet potatoes, beets, green apple, and bell pepper lightly coated in olive oil and sprinked with sea salt.
Ingredients
- 1 Sweet Potato
- 2 Beets
- 2 Green Apples
- 1 Bell Pepper
- Sea Salt
- Olive Oil
Instructions
Cut the vegetables in to bite size pieces and place them on a baking sheet that's covered with foil or parchment paper. Drizzle the vegetables and apple with olive oil and sprinkle with sea salt. You just want enough olive oil to lightly coat the vegetables and apple, then mix by hand or with a utinsil of your choice to evenly coat them.
Spread the vegetables even across the pan and bake at 425 for about 20 minutes.
Notes
You can add other spices or seasonings to the vegetables and apple. The olive oil can be subbed for avocado oil or another oil of your choice. Also, the bell peppers have a strong flavor and in a way take over the flavors of the dish. I would leave the bell peppers out if you prefer to not have that southwest flavor.
