Baked sweet potatoes, beets, green apple, and bell pepper lightly coated in olive oil and sprinked with sea salt.
Cut the vegetables in to bite size pieces and place them on a baking sheet that's covered with foil or parchment paper. Drizzle the vegetables and apple with olive oil and sprinkle with sea salt. You just want enough olive oil to lightly coat the vegetables and apple, then mix by hand or with a utinsil of your choice to evenly coat them.
Spread the vegetables even across the pan and bake at 425 for about 20 minutes.
You can add other spices or seasonings to the vegetables and apple. The olive oil can be subbed for avocado oil or another oil of your choice. Also, the bell peppers have a strong flavor and in a way take over the flavors of the dish. I would leave the bell peppers out if you prefer to not have that southwest flavor.
